Einkorn (Triticum monoccocum) also known as Farro or Einkorn Wheat, is an superbly nutritious ancient whole grain first grown in the Fertile Crescent. It is a non-GMO ancestral alternative to traditional wheat.
Though not gluten-free, the gluten in Einkorn is very delicate and can be digested by some people who are sensitive or intolerant to gluten and need to be on a gluten-free diet.
Risotto-type dishes are easily prepared by cooking the berries for 30-60 minutes. Compared to rice, Farro risotto will always be slightly crunchy. For Mediterranean style salads, let the Farro risotto cool in the refrigerator, then blend with veggies and spices for Tabouleh. Farro grains add robust flavor to soups.
Soak over night. Simmer in a pot with your favorite vegetables for a wonderful soup, or cook like brown rice and add to onions, garlic and herbs sauteed in olive oil.

We do need some more Einkorn because.... we found a new thing to do with it. We sprouted some of it and put it on a salad. Then someone put some greens through their juicer and WOW it packed a punch for a green smoothie!
We eat Ezekiel bread and thought why not eat the soggy grains, too? What a great nutty taste. I added the grains to homemade yogurt with some orange and lemon peel and fresh maple syrup.
Man, the possibilities are endless! We love it!
