Directions: In mixing bowl stir 1 cup pancake mix, 1 cup milk and 1egg until smooth. Lightly grease griddle, reheat to 375F. Pour 1/4 cup batter onto hot greased griddle. Cook until bubbles begin to break. Turn and cook until lightly browned. Yield: Makes 10 four-inch pancakes. Serve with butter and your favorite syrup. Waffles: Add 2 Tbsp Olive Oil. Follow waffle iron cooking directions.

Spelt Farro is a sweet grass species, an out-cross of Emmer occurring at the dawn of agriculture in the Caspian region. Due to its superb functionality as bread grain, Spelt became the primary cereal crop of Central Europe. In the 12th century, Hildegard von Bingen recognized Spelt as the Healing Grain, and to this day Europe considers Spelt the superior and healthier alternative to commodity wheat.

Just a note to tell you how well the Spelt Pancake Mix worked with my tummy! It was so delicious! I made the 1 cup amount. I had 4 or 5 huge pancakes, so i had quite a nice supper! My husband laughed at me. Told him I wanted to give it a good try.
