Einkorn spread as agriculture spread. Archeologists find Einkorn, often together with the other hulled grains and Camelina, in subterranean grain silos of almost all the earliest civilizations in Europe. The most prosaic Einkorn travel came to light in the Alps with the discovery of Copper-Age Ötzi the Iceman, Einkorn his last meal, Einkorn in his pockets.

At Lentz Spelt Farms we started with a handful of Einkorn seed that originally came from the USDA germ-plasm facility in Aberdeen, Idaho; it took seven years of seed-increase plot work before the first Einkorn field in the US could be harvested with a combine.

We're proud of our Einkorn. The chefs love it, and so do bakers. It's the most ancestral alternative to wheat.
